My family is going into extreme saving mode. I’ll write more on why in my next post (but don’t panic…we’re OK). So this week I’m cooking with ingredients I already have on hand.
For me this is a really frugal menu, because everything I need is already in my pantry or refrigerator. For others, this might not be a frugal menu. It depends what your pantry looks like.
The Frugal Menu
Monday: Spaghetti, Salad
Tuesday: Chicken Pot Pie, Fresh Fruit
Wednesday: Michelle’s Blonde Chicken Chili, Cornbread, Salad
Thursday: Burritos (maybe bean, maybe chicken), homemade tortillas (my daughter will be making them), fresh fruit, rice
Friday: BBQ Steak, Veggie Platter, fruit
Saturday: Homemade Pizza
Sunday: Leftovers
Not bad for working out of the pantry! I may have to stock up on fruit and salad fixin’s during the week, but otherwise, everything is already in the house, ready to be used for dinner!

I love that you’re going to post what you’ll eat during the upcoming week. Success in spending less, eating at home and healthy cooking is based on a plan. I like to do the opposite and look at What We Ate Last Week. Visit my blog if you’re interested. Keep up the good work.
Menu planning saves money, especially when we make a point of using ingredients that are already on hand. I keep thinking of doing an eat-from-the-pantry week, but I haven’t tried it yet.
I had to do a full shop this week as we hadn’t been to the grocery store (except the quick run to pick up bread) in 3 weeks. So, the pickings in the pantry were pretty light.
Anyway this week we are having Crock Pot beef sandwiches; broccoli chicken; lentil soup with homemade bread; shrimp and asparagus stir fry (both were on sale this week); spinach casserole and enchilada casserole.
You just can’t beat spaghetti and salad for a cheap meal. My family is fussy about sauce – they don’t like chunks, so when the brand they like was on sale for .77/jar, we stocked up on it, and when spaghetti was 3/$1 for 1 lb. boxes, we stocked up on that too! Now that what survived my garden attack (by some small furry critter that managed to get through the fence somehow and ravaged my veggies) this year is ripe, we get to add some fresh tomatoes and garlic to the meal.
I’m another one for menu planning. Not only does it help our tight budget, it just makes life simpler and less stressful on my ADD brain!
One question though, how do you (or your daughter) make the tortillas? Do you have a tortilla press? I tried making them once years ago and never tried again.
