For lunches, the simpler the better, I have actually used the uncrustables, if you take them frozen they keep till lunchtime. It makes a great quick lunch when you didnt have time to make it yourself. We also use turkey on whole grain bread, apple sauce, or pudding snack, fruits, carrot sticks, and water pods which I also freeze, it keeps the lunch cold, and usually defrosts by lunchtime.

I work a 10 hour night shift so I try to pack an assortment of healthy foods so I'm not tempted to eat out of the vending machine. Last night it was string cheese, almonds, crackers, carrots, chicken and grapes. I also frequently pack left-overs, applesauce, yogurt and trail mix.

My kids are old enough to pack their own lunches, but I always make sure we have lots of good stuff. They prefer homemade bread and rolls so I try to make sure we have some on hand. I also keep lots of lean meats on hand for sandwiches. They also like fruit, yogurt, cheese, and veggies and dip.

I like to make use of any leftovers we may have if possible. I also like to make sure they have fresh fruit / veggies which are great finger foods too. We try to make packing lunches a family discussion over breakfast.
