Our family makes a similar mashed potato recipe. If you are pressed for time, it is just as good with boxed mash potato mix. You can make them festive and even tastier for Christmas by adding a small jar of diced pimento (drained) and some scallions. They taste even better and go with the Christmas color theme.

Lots of good ideas there.

Do you know all those home projects you need to get done? The writing, and correspondence, the sewing, and that book I’m writing, or the scrapbooking gifts that need done? I am thinking that a LOT of the work at home ideas will also work well for me to help get some of those projects moving forward a little better. I think the dedicated time slots are a must… as I tend to waste time in the evenings flitting about and hitting a little of everything but rarely finishing anything!

And I always go home Friday night from work with a weekend project list…I tape it to my kitchen cupboard and manage to cross a lot of them off just by having that list in my face all weekend :)
